  • Do not compact the mince into a dense puck. Press it just enough to hold together, or you will get meatloaf texture rather than burger texture.
  • A dimple pressed into the centre of each raw patty stops it doming into a ball as it cooks.
  • The onion should be raw and sliced thin. Cooking it turns it sweet and takes away the sharp edge the real thing has.

Variations

  • Add a slice of processed cheddar straight after the flip and you have a home Whopper Cheese.
